After Dinner Dessert

   This is a recipe my family and I enjoy maybe once a month on a Saturday or Sunday. It is one of those lazy don't want to make a cake or pie recipe. But they are good to me. Please try it, and I hope you enjoy.

Vanishing Oatmeal Raisin Cookies






ingredients 



1/2
pound (2 sticks) margarine or butter, softened

1
cup firmly packed brown sugar

1/2
cup granulated sugar

2
eggs

1
teaspoon vanilla

1-1/2
cups all-purpose flour

1
teaspoon baking soda

1
teaspoon ground cinnamon

1/2
teaspoon salt (optional)

3
cups Quaker® Oats (quick or old fashioned, uncooked)

1
cup raisins








preparation 



1.  
Heat oven to 350°F. In large bowl, beat margarine and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well.

Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.

Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.



Servings: ABOUT 4 DOZEN

A Healthier Edge

Hello Faith Spot family.  I would like to suggest to those of you who are trying the recipes as is, but would like a healthier snack to cut down on some of the ingredients a bit.  I am trying to take on healthier foods and find it a little hard to transition.  Therefore, what I have been doing with my snacks or desserts from scratch is cutting down on the butter and sugar.  What I have found out is that the end product is just as good as the original recipe.  So, depending on your taste buds you may want to gradually cut down on the sugar and/or butter however you see fit.  With the Vanishing Oatmeal Cookies, I only use one stick of butter (you may want to cut down a little more) and with the sugar, I use the majority of brown sugar and very little white sugar.  Try it and taste for yourself.
